Gozney - Neapolitan Domed Arch and Chimney Extension
Dominate your leopard-spotted crusts and take your pizza to the next level with this ceramic-coated Neapolitan arch. This arch lowers the door height, improving heat retention, creating the ideal environment for high-hydration doughs.
Neapolitan pizza is cooked at very high temperatures and quickly. The oven must be at full thermal saturation (450°C+ / 845°F), which allows for cooking times of 45 to 60 seconds. To achieve a beautifully charred crust on a high-hydration dough, the air temperature must be very high. The arch narrows the oven opening, allowing the air temperature to reach a much higher temperature and cook the Neapolitan pizza perfectly.
The arch is made of bonded ceramic with a recess in the central opening, which allows the pizza maker to "dome" the pizzas (place the rotating peel under the crust and lift the pizza into the flames on the highest temperature of the oven).
The dome flue extension helps vent smoke and soot from the furnace, improving air circulation.
The Neapolitan Ark is designed to enhance the pizza cooking experience using gas only. It is not designed for use with wood.
