Our Liquid Brine Mix NOW WITH NITRITE AND ERYTHORBATE!!!

Every piece of meat that touches this solution bears the unique signature of Chez Biceps BBQ. Unique and powerful, it leaves no one indifferent.

Size: 275g - resealable sealed bag.

USE : For brining short ribs, chicken, bacon, smoked meat, etc.

The spices dissolve in cold water, and during brining, this water penetrates the meat, carrying all the flavors to the center. During cooking, this water evaporates, leaving behind juicy, perfectly seasoned meat.

INSTRUCTIONS FOR USE

  1. Pour the contents of the sachet into 3 liters of iced water, mix well using a hand blender to melt the salt and mix in the spices.
  2. Place the piece of meat in the cold brine. Place a weight on top of the meat to prevent it from floating (e.g., a plate). The piece of meat should be completely submerged. Add plastic wrap directly over the liquid. Refrigerate immediately.
  3. Do not stir during brining time. See brining times below.
  4. Removing the meat from the brine, rinsing it is unnecessary.
  5. Cook the piece of meat according to your wishes.

Highlights:

  • We recommend using 800ml of brine per kilo of meat.
  • So one bag of brine cures 3.75 kilos of meat.
  • Dilution instructions on the bag.
  • For a whole brisket, you will need 3 to 4 bags depending on the weight.
  • For your smoked meat, we recommend our steak spices as a final rub before smoking your brined brisket. The mixture is purposely balanced with salt to ensure the two blends are in balance.
